Baked Blueberry-Lemon Pancakes

I initially found  this on my cousin Krista's blog, Everyday Mom's Meals.  I had some blueberries and lemons to use up so I decided to give the recipe my own little twist!  This is such a quick and easy breakfast since it uses pancake mix. I have several variations in mind so you'll be seeing more of my ideas in the near future!

Baked Blueberry- Lemon Pancakes

 2 C pancake mix
1 1/2 c. fat-free milk
1 egg
1 TBS canola oil
1/2 tsp lemon extract
1 tsp lemon zest
1 c. fresh or frozen blueberries

In a large bowl, combine the pancake mix, milk, egg, oil , lemon extract and lemon zest until blended. (Batter will be lumpy). Fold in blueberries. Spread into a greased 10 x 5 baking pan. Bake @ 400º for 10-12 minutes until golden brown.

*Note* If using frozen berries, do not thaw to avoid discoloration of batter

I love pancakes(mostly make them thin almost like crepes) from wheatflour.And I jhave frozen blueberries.Guess what I am going to make;))
