Chicken Patties

I have had this recipe for years and we just love it. I don't remember the exact source but am willing to bet it came from Taste of Home or Quick Cooking. We usually eat this once a month and I like that I can make the chicken ahead of time then assemble the patties right before cooking. I like to roast bonless, skinless chicken breasts in the oven and use those.( To roast in the oven I season with salt & pepper and drizzle liberally with olive oil. Bake at 350 for 45 minutes to an hour) However,a shortcut idea is to use a rotisserie chicken. I've done that several times if I've forgot to cook the chicken ahead of time! Either baking the chicken ahead of time or using the rotisserie chicken makes this an easy meal to put together on a busy weekenight.



Chicken Patties

2 C cooked chicken, shredded
1/2 C Saltine crackers, crushed
1/3 C mayonnaise
1/8 tsp pepper
1/2-1 tsp seasoned salt
1/2-1 tsp garlic powder
2 Tbsp Canola oil

In a bowl combine combine chicken, mayonnaise, cracker crumbs, pepper, seasoned salt and garlic powder.
Shape into medium sized patties. heat oil in large skillet and fry patties over medium heat for 2-3
minutes on each side until golden brown and heated through.

*I usually get four medium sized patties. For more adjust quantities accordingly.
