Cheesecake Stuffed Strawberries

It is strawberry season and I can't seem to get enough of those sweet berries. Thankfully, I keep finding new things to do with them. I may try some of these with almonds and some with graham cracker crumbs on top.

Cheesecake Stuffed Strawberries

24 large straberries, hulls removed
12 ounces cream cheese, at room temperature
1 tsp vanilla 
3 Tbsp powdered sugar 
1/2 cup almonds, chopped fine

Place cream cheese in a bowl, and microwave for 30 seconds, so that it's soft. Whip together the cream cheese, vanilla, and sugar.  In the center of each strawberry, using a sharp knife, make a hole in each one, as deep as you can without going out the bottom. Spoon or pipe the filling into each hole.  Dip cheesecake end of strawberry into chopped almonds.
