Being that the Amish Breakfast Casserole has been the most viewed recipe on my site I figured I should actually try it! I also wanted to give better directions as the recipe that I had on an old recipe card was not very clear. I am very, very glad that I tried it because it was delicious!
I admit that while it sounded good to me, I was a little worried about the egg in it because I am not a fan of baked eggs- at all! No strata, frittats or quiches for me....ick! But with the changes I made it was perfect. I made this for breakfast this morning and served with a fruit salad and it was the perfect Saturday morning breakfast for us.
