Caramel Corn Puffs- Day 51 of the 100-Day Countdown to Christmas

This recipe is an old favorite of mine. One year when I was in high school my best friends mom made something similar for my family. My mom began using their idea for the puff corn along with her caramel  recipe and a tradition was born!  Over the years it has remained a family tradition and my mom is known in the small town in which she lives for her caramel corn! A few years ago that same friend and I reconnected (17 years later) and I told her about this becoming a tradition in my family.

This is caramely, buttery, crunchy goodness! I usually use one 5 oz. bag of the butter flavored hulless popcorn and the full amount of caramel so it has a ridiculous amount of caramel on it! If you like a little popcorn with your caramel you may want to half the caramel or add another bag of popcorn. It's all really your preference. Go ahead, give this a try! I bet you won't go back to regular caramel corn!


Caramel Corn Puffs
2- 5oz. bags hulless popcorn (puff corn)
1 C butter
2 C brown sugar
1/2 C Karo syrup
1 tsp salt

Boil above ingredients for 5 minutes then add:
1 tsp vanilla
1/2 tsp baking soda

Lightly spray roasting pan; preheat oven to 250 degrees. Place hulless popcorn in roasting pan.  In large saucepan add butter, brown sugar, Karo Syrup and salt. Bring to a rolling boil and boil for 5 mintues; stirring constantly. Then add vanilla and baking soda; mix well. Pour mixture over popcorn and stir well to coat. Bake for 1 hour; stirring every 15 minutes. Turn out onto wax paper and let cool completely then break apart. Store in air tight container.

After i tried other than regular white popcorn I never went back and with caramel are my favourite;)
