My measurements are not exact on this as I didn't follow a recipe. I only used 3 potatoes and that was enough for the three of us (we don't eat leftovers) so if you're feeding a bigger bunch be sure to adjust the quantities. It really is simple to just 'eyeball' the ingrediants in this recipe. I just thought of the things I put on my loaded baked potato and added them! So feel free to change it up to what you like on your potato!
Loaded Baked Potato Salad

3 baking potatoes
5 strips bacon, cooked crisp and crumbled
3/4 C sour cream (I used light)
1 tsp chives ( I like a lot)
1/8 tsp garlic powder
1/2 tsp dried parsley
Salt & Pepper, to taste
1/2 C shredded cheddar cheese
Preheat oven to 400 degrees. Wash potatoes, prick with a fork and bake until tender; about an hour. Remove from oven and let cool completely. After cooled, peel potatoes and cut into bite size pieces.
In a bowl mix together sour cream, chives, garlic powder, parsley, salt, pepper and cheddar cheese. Add sour cream mixture to potatoes and gently fold in to mix together. Serve at room temperature.
