Broccoli Salad - With a twist!

This recipe is one that my mom loved to make when I was growing up and I absolutely hated it! But after years of not having it I decided to re-visit it and make some changes. After making the changes, I love it! The mustard just gives the dressing a little tang.  We've been eating it a lot this summer because it's so quick and easy.

Broccoli Salad

1/2 pound bacon, fried and crumbled
1 head fresh broccoli, chopped
1 carrot, peeled and shredded
1 C shredded sharp cheddar cheese
1 C mayonnaise
1/2 C sugar
2 Tbsp white vinegar
2 tsp yellow mustard

Fry bacon, crumble and set aside. Wash and chop broccoli and place in a large bowl. Wash, peel and shred carrot then add to broccoli; add cheese and bacon. In a separate bowl combine mayonnaise, sugar, vinegar and mustard. Whisk until well combined. Add dressing to broccoli mixture and mix well. Refrigerate at least 1 hour.
