Rainbow Veggie Wrap

This is another recipe I found in First for Women. It's so simple and easy it's makes you think....you actually need a recipe for that? Think of it more as an idea rather than a recipe. I think it sounds like a nice refreshing summer lunch.

It's full of low-glycemic, non-starchy vegetables like carrots and scallions that keeps blood sugar levels steady for lasting energy. (That's for ME because my son doesn't need one more ounce of energy!) The spinich supplies Omega 3 fatty acids and B vitamins. This wrap is just power packed with vitamins!

Rainbow Veggie Wrap

2 Tbsp Dijon mustard
2 Tbsp low-fat ranch dressing
2 tsp honey
2 large tortillas or sandwich wraps
2 cups torn green leaf lettuce
1 cup baby spinich leaves
1 each yellow and red pepper- seeded and sliced
1/2 seedless cucumer, sut into sticks
1/2 cup shredded carrotts
8 sprigs parsley
1 scallion sliced

In a bowl combine Dijon mustard, ranch and honey; spread evenly  over tortillas. Add all vegetables; fold and roll tortillas to secure filling. Cut each wrap in half to serve.
