Watermelon Agua Fresca

I had to chuckle at this recipe becasue my son is a huge Handy Manny fan and there is an episode where they talk about agua fresca! A few days ago I posted a recipe for a watermelon lemonade. It was delicious but I think this will be even more refreshing! I found this recipe at Mommy's Kitchen and she mentions that this same method can be used for strawberrry, cantelope, honey dew. Just adjust the amount of simple syrup for the fruit you are using.

Watermelon Agua Fresca

7 - 8 cups cubed watermelon (seeded)
1 - cup water
1/2 - cup prepared simple syrup
chopped mint leaves, optional

To prepare the Simple Syrup: In a medium saucepan combine one cup sugar and one cup water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool. While the simple syrup is cooling. Cut and seed the watermelon.
Place watermelon, water and prepard simple syrup in a blender and puree. Puree until everything is mixed together. Pour mixture through a medium strainer into a bowl then pour into a pitcher. Serve over ice and enjoy.
