Grilled Eggplant
1 large eggplant
1/3 C butter, melted
1-2 cloves garlic, minced
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
Peel and cut eggplant into 3/4 in slices. Combine butter, garlic and Italian seasoning and brush on eggplant. Sprinkle with salt and pepper. Grill 10 minutes or until tender, turning and basting frequently.
