In April 2010, as my sister's Matron of Honor, I hosted a bridal shower for her. I chose a tea theme and had wanted delicate finger foods to be served. My sister loves fruit pizza so I knew I wanted to serve that, but I wanted them to look a little more fancy than baking the crust on a sheet pan and cutting it into squares. After giving it some thought this is what I came up with. It was SO much easier (no baking required!) and they looked elegant enough for her tea. I received many compliments on them!
I used strawberries, blueberries and kiwi but you can use any fruit assortment of your choice. We like to make these with strawberry cool whip but can no longer find it. Another idea, if wanting flavored cool whip, would be to add a few drops of flavoring such as almond or vanilla and fold in.
Individual Fruit Pizzas
1 pkg store bought soft sugar cookies
16 oz. cool whip
strawberries
blueberries
kiwi
Wash fruit and cut into bite-size pieces. Spread 2-3 Tbsp of Cool Whip on each sugar cookie. Top with diced fruit.
