Grammy's Potato Salad Dressing

I am lucky to have two great cooks that have inspired me: my grandmother and my mother. This recipe is from my grandmother who obtained it from a friend of hers and she has been using it for years. I especially like this recipe becasue it does not contain mayonnaise. I do not like mayonnaise, at all (occassionally I will find a recipe where the mayo is covered enough that I can eat it). It also makes a great macaronii salad dressing. If you need a macaroni or potato salad to take to a picnic this summer I suggest trying this- it will hold up better in the heat without the mayo!

Grammy's Potato Salad Dressing

1/2 C water
1/2 C vinegar
1/2 C sugar
2 tsp flour
1  tsp salt
4 eggs
1 tsp butter

Heat water and vinegar, but do NOT boil. In a separate bowl mix together sugar, flour and salt. Then add eggs and mix. Add very slowly (so the eggs don't cook too fast) to the heated vinegar and water mixture. Cook until it boils and thickens; stirring constantly. After thickened remove from heat and stir in butter.

**tip** I, personally, remove from heat and add some of the vinegar/water mixture to the egg mixture slowly to temper the eggs. Otherwise, I end up with bits of scrambled egg in my potato or macaroni salad! My grandmother can do it as the directions state and have it turn out perfect everytime! Practice makes perfect, I guess. :-)
