Grilled Corn

There are so many things about summer I love. The fruits and vegetables are at the top of that list! I love corn on the cob! I've tried out-of-season corn too many times and it was awful so I won't even try it any more. I also will not buy it at the grocery stores- even if it is locally grown. Reason? How long has that corn been sitting there? When I go to our local farmer's road side stands I can ask when it was picked and they tell me that morning. One thing I know about corn is it has to have been picked THAT day or I don't want it. It looses flavor immediately, in my opinion. Nothing will ever compare to the corn my grandfather grew in his garden. Right before supper we would go pick and husk it. It doesn't get any fresher than that- delicious!

I love the standard boiled corn but for a change of pace I like to grill it also. I've tried it different ways such as soaking it then grilling it without foil but I've found I like this method the best. 

Grilled Corn

6 ears corn
5 Tbsp butter
salt and pepper to taste

Preheat an outdoor grill for high heat and lightly oil grate. Peel back corn husks and remove silk. Place 1 tablespoon butter, salt and pepper on each piece of corn. Close husks. Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.
