Cheesy Ranch Potatoes

These are my husbands favorite potatoes so I am making them today for Father's day.

4 pounds russet potatoes, cut into 1/4 inch cubes
2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1 (8 ounce) package shredded colby-Monterey Jack cheese blend
Ranch Dressing - to taste
Olive Oil- to taste

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish. Place the potatoes in a large bowl. cover with enough olive oil to evenly coat (I probably use  4 Tbsp)  Season with chili powder, salt, and pepper. Stir well to again evenly coat the potatoes.
Cover dish with aluminum foil, and bake 1 hour in the preheated oven, until potatoes are tender. Remove from oven, and mix in the cheese and Ranch dressing (again, it's personal preference- I use approx. 1/2 cup). Continue cooking 10 minutes, or until cheese is melted and bubbly.
