Grammy's Nut Rolls (shortcut included!)

My grandmother makes the best sweet rolls- ever! When you go to her house you can count on her to have some prepared for breakfast. My mom used to make them for Christmas morning and it became a Christmas tradition. My mom still continues to make them for us, even if we are not going to be home for Christmas! Yes, I am spoiled!

I recently learned that my grandmother uses that same sweet dough to make her nut rolls.  The sweet dough base is covered with butter and cinnamon sugar then rolled and cut and placed in muffin tins that have been filled with butter, brown sugar, Karo and pecans! I have to admit the sweet rolls and nut rolls run a tight race in my opinion!

Grammy's Nut Rolls (traditional method)

Sweet Bread:

1 Pkg dry yeast
3/4 C milk- scalded
1/3 C sugar
1/3 C Crisco
1/4 tsp salt
1/2 tsp vanilla
1 egg- beaten
3 C flour

Filling:

2 Tbsp butter, melted
2 Tbsp cinnamon sugar

Topping:

1 Tbsp Brown Sugar
1 Tbsp melted butter
2 tsp Karo syrup
1-2 tsps Pecans
** this amount goes into each muffin cup

Scald milk then add sugar and crisco to hot milk; stir until just melted then cool slightly. Add beaten egg, salt, vanilla ; stir; then add yeast and mix well. With  mixer set on high speed gradually add flour. Add 1 1/2 Cups of flour then beat for 6 minutes; gradually add reamining 1 1/2 cups of flour. Mix well.

Turn out onto well floured surface and knead 3-4 minutes until smooth. Place in a large bowl which has been covered in oil. Cover and let rise until doubled in size- about 1-2 hours.

Place topping ingrediants into ungreased muffin cups. Divide dough into 2-3 portions and roll each portion into a rectangle 1/2 " thick. Spread filling mixture over dough then roll up like a jelly roll, starting with the long end. Cut into 1/2 " pieces and place in muffin pans. Let raise for about 1 hour. Bake in preheated 375 degree oven for  15-20 minutes. Remove from oven and let rest in pan for 2-3 minutes before removing. Invert pan onto foil to remove rolls.

1 can cinnamon rolls
1 Tbsp Brown Sugar
1 Tbsp melted butter
2 tsp Karo syrup
1-2 tsps Pecans

Preheat oven according to package directions. Place 1 Tbsp brown sugar, 1 Tbsp melted butter, 2 tsp Karo, 1-2 tsp pecans into EACH muffin cup. Place cinnamon roll on top and bake according to package directions. Remove from oven and let rest for 1-2 minutes then invert pan onto aluminum foil to remove rolls.
